a recipe

With Fall just days away, I am posting my favorite recipe for the season. I can't believe I have never posted it before. It is a family recipe from my grandmother passed on to my mom and to me, and has been on our Thanksgiving table since I can remember.

Sweet Potato Casserole

Preheat oven to 350°.

For filling, mix together:
  • 3 cups mashed sweet potatoes (plain canned without syrup or oven roasted)
  • 1 cup granulated sugar
  • 1 teaspoon vanilla
  • 1/3 cup milk
  • 2 eggs
  • 1/2 cup butter
  • cinnamon
Spread mixture into a buttered 13 x 9 baking dish.

For the topping, mix together:
  • 1 cup light brown sugar
  • 1/3 cup butter (don't melt)
  • 1cup chopped nuts (pecans or walnuts)
  • 1/3 cup flour
Sprinkle topping over sweet potato mixture evenly.  Bake at 350° for 35 minutes or until top is bubbly and brown sugar is evenly melted.

Great as a side dish or even a dessert!
